Louisiana Gumbo's Northshore Restaurant Guide's Recipe of  the Month

Preparation
Add butter to sauce pan over medium heat.  Add bacon, scallions and parsley.  Sauté for five minutes.  Add cream and heat to 80 degrees.  Add parmesan cheese, salt and pepper and simmer until sauce starts to thicken.  Then add chicken and simmer three more minutes.  Pour over cooked pasta and toss and before serving.  Sprinkle with black pepper and parmesan cheese.

Chicken Carbonara
Serves four
Ingredients

3 7-8 oz grilled chicken breast diced in bite size pieces
24 oz pasta of your choice; penne', bowtie, etc.
1 quart heavy whipping cream
1/2 cup diced cooked bacon
1/4 cup scallions
1/4 cup chopped parsley
1/4 tsp. black pepper
1 cup parmesan cheese
1 tsp. salt
1/8 cup melted butter
