Preparation

 Blanche artichokes for 20 to 30 minutes over medium heat.  Remove and drain off excess water.  Cut off stem and top of artichokes (photo A).  remove choke (center, do not remove heart).  Mix remaining ingredients in a bowl and stuff each artichoke with mixture, spreading leaves as you stuff (photo B).  Arrange in pan with about 1 inch of water.  Cover with foil and bake for 45 minutes at 450 degrees.  Serve with a slice of lemon and sprinkled with cheese and parsley.

Stuffed Artichoke Recipe Serves 2 to 4


Ingredients

2 each Artichokes (med. to lrg.)
1 tsp.  salt
1 tsp. pepper black
tsp. lemon juice
each Anchovy (chopped)
1 tsp. oregano
1/2 cup Parmesan Cheese
tsp. parsley (chopped)
3 to 4 tsp. white wine
3 cup bread crumbs (plain)
